Ham And Cheese Quiche With Other Goodies |

Pastry for 10-inch Single-Crust Pie
2 tablespoons butter real
1 cup leeks thinly sliced green onions, onion, or a combination
1 clove garlic minced
1 cup shrimp shelled small
Salt and freshly ground pepper to taste
4 eggs
1 1/2 cups half and half
2/3 cup ham diced cooked
1/2 cup swiss cheese diced
1/2 cup cheddar cheese diced
1/2 teaspoon salt
Nutmeg Ground
Prepare and prebake pie shell as directed. Remove from oven, set aside, and reduce heat to 350° F. Melt butter in skillet; add leeks or onions and garlic. Sauté for 2 minutes, stirring. Add shrimp and stir for 1 minute. Sprinkle lightly with salt and pepper, remove from heat and set aside. Beat eggs, stir in half-and-half, ham, cheeses, 1/2 teaspoon salt, and pepper to taste. Arrange shrimp mixture in pie shell; carefully add egg mixture and lightly sprinkle top with nutmeg. Bake for 35 to 45 minutes or until knife inserted near center comes out clean. Remove from oven and let stand for 10 minutes before cutting into wedges.
