Season the chicken with salt and pepper. Sprinkle half of the oregano and garlic inside the cavity. Melt butter in a skillet and brown the chicken. Transfer it to the crockpot. Sprinkle with the remaining oregano and garlic. Add water to the pan you used to brown the chicken and stir to loosen the bits. Pour this into the crockpot. Cover and cook on LOW for 8 hours. Add lemon juice to the pot for the last hour of cooking.
