Combine all ingredients, except ice cream and vanilla wafers. Cook over medium heat until peaches are soft. drain and chill. At serving time, place 1 scoop of vanilla ice cream in 4 champagne glasses. Place 4 quarters of peach around ice cream. Top with Raspberry Sauce, and serve with vanilla wafers.
Raspberry Sauce:
Combine all ingredients in saucepan. Cook over medium heat, stirring constantly, until sauce is thickened and bubbling. Cook at least 1 minute extra. Strain sauce to remove seeds. Cover and chill.
