To cook sweet potatoes, bake in preheated 350° oven 40 minutes, or boil in water to cover 20 minutes, until soft. Cool, peel, and mash until smooth. In large bowl, beat eggs with sugar, salt, and spices. Add mashed sweet potatoes and evaporated milk; mix well. turn into unbaked pie shell. Bake in preheated 350° oven 1 hour and 15 minutes or until tip of silver knife inserted in center comes out clean. Garnish with pecans. Serve with whipped cream or ice cream, if desired.
