Hot Fudge Sauce:
Melt chocolate and butter over low heat, stirring to blend. Add sugar and stir until completely dissolved. Add heavy cream, stirring to combine. Remove from heat. Add vanilla and stir until well mixed. Set aside.
Éclair:
Cook pudding according to package directions. Let cool. Make a pocket in croissants, and evenly divide sliced bananas among each pocket. Spoon in desired amount of vanilla pudding, and drizzle Hot Fudge Sauce over top.
