Cookie presses, sometimes called cookie guns, make it easy to turn out professional-looking spritz cookies at home. The device, available in kitchen specialty shops or department stores, consists of a metal or plastic cylinder that holds the dough and a handle that fits into one end. After the dough is "loaded" into the cylinder, a disk with a stamped-out design fits into the front end of the press. Turning or pressing the handle forces the dough through the disk, yielding cookies of uniform size and shape. Cookie-press dough must be firm enough so it doesn’t stick to the inside of the press during shaping and stable enough to hold its shape when baked. For best results, use a spritz recipe or another recipe specifically formulated for a cookie press.
