1. Heat oven to 350°F. In medium bowl, combine brown sugar, 1/3 cup sugar and butter beat until light and fluffy. Add vanilla blend well.
2. Add flour, ginger and salt mix well. Stir in crystallized ginger. Shape dough into 1-inch balls roll in 1/3 cup sugar. Place 2 inches apart on ungreased cookie sheets. Flatten with bottom of glass dipped in sugar.
3. Bake at 350°F. for 7 to 10 minutes or until edges are light golden brown. Cool 2 minutes remove from cookie sheets.
High Altitude (above 3500 feet): Decrease brown sugar to 1/2 cup increase flour to 2 1/4 cups. Bake as directed above.
