With three sheets, you can bake one pan while you prepare another and cool a third. Cookie sheets come in four basic styles.
*Shiny: Silver-colored aluminum sheets without sides produce the best results. The shiny metal reflects heat, so cookies do not burn as easily.
*Double-layer: Cookie sheets with an insulating "cushion of air" between two sheets of metal are more expensive. Cookies do not brown as much on the bottom, so cooking time increases slightly and doneness can be harder to judge.
*Black or dark surface: Cookies bake faster on a dark, nonreflective surface that absorbs heat. Watch closely to prevent the bottoms from burning.
*Nonstick: While many cookies have enough shortening to prevent sticking, nonstick pans are still convenient for cleanup. Use only plastic utensils to avoid marring the finish. If the surface color is dark, watch closely to prevent the cookie bottoms from burning.
