When the recipe calls for a greased pan, use a paper towel to rub a thin, even layer of solid vegetable shortening. Do this before the first batch only.
If you use nonstick cooking spray instead of shortening, spray it lightly and evenly over the pan and bake as usual. To prevent spray buildup, wipe the pan with a paper towel between batches and then spray again.
If the recipe requires greasing and flouring, spoon about 1 teaspoon of flour onto the greased pan, then tilt it from side to side and tap the edges to distribute it evenly.
