1. Heat oven to 375°F. In large bowl, combine brown sugar and margarine beat until light and fluffy. Add vanilla and egg white blend well.
2. Add flour, cocoa, baking soda and salt mix well. Stir in chocolate chips. Drop dough by teaspoonfuls 2 inches apart onto ungreased cookie sheets.
3. Bake at 375°F. for 8 to 9 minutes or until set. Do not overbake. Cool 1 minute remove from cookie sheets.
TIP: If desired, cookies can be glazed. In small bowl, combine 1/2 cup powdered sugar, 1 1/2 teaspoons milk, 2 drops vanilla and, if desired, 2 drops butter flavor stir to blend. Drizzle glaze over cookies.
High Altitude (above 3500 feet): Increase flour to 1 cup plus 2 tablespoons. Bake as directed above.
