Place chocolate pieces in a microwave-safe container. If possible, melt the chocolate right in the mixing bowl before adding other ingredients. Watch closely: Most chocolate melted by microwave will retain its original shape somewhat even when melted. Look for a glossy appearance and stir the chocolate to judge whether more time is needed.
1 oz. baking chocolate:
1 to 2 minutes on high stir
Add 10 to 20 seconds at a time until chocolate can be stirred smooth
2 oz. baking chocolate:
1 to 2 minutes on high stir
