BLACK, GREEN AND OOLONG TEA
Tea varieties fall into three categories: black, green and oolong.
* Black teas have a rich aroma and amber color when brewed. Varieties include Ceylon, Darjeeling, English breakfast, Earl Grey (flavored with oil from the rind of bergamot, a citrus fruit) and Lapsang souchong. Varieties of black tea flavored with spices are increasingly available.
* Green teas, gaining popularity because of their reputed health benefits, have a slightly bitter flavor and pale green color when brewed.
* Oolong tea is a cross between black and green tea. Popular varieties include jasmine and Formosa oolong.
CHAI
In many languages around the world, chai simply means "tea." In Japanese culture, the centuries-old chai ceremony is as much about social ritual as it is about drinking hot tea.
In America, tea and beverage purveyors are beginning to stock "chai mixtures." These mixtures blend tea and spices, which are typically steeped in a mixture of hot milk and/or boiling water, then strained and sweetened to taste. Caffeine-free herbal versions are available, too.
HERBAL "TEAS"
True herbal teas are not made with tea leaves at all, but with a blend of herbs, spices and other aromatic ingredients. Many require longer steeping to fully develop the flavor. Herbal teas are usually caffeine-free, but some are mixed with regular tea leaves. Some also contain sugar.
Not every herbal tea is a good choice for people wishing to avoid caffeine. Pregnant or nursing women, in particular, should consult their physician about the ingredients in herbal teas.
