Brush crust with egg yolk. Bake on an ungreased baking sheet at 375 degrees for about 5 minutes, until golden. Set aside. Combine remaining ingredients, omitting lemon juice if apples are very tart; mix well and spoon into crust. Sprinkle evenly with Crumble Topping. Return pie to baking sheet; bake at 375 degrees for about 50 minutes, until filling is bubbly and topping is golden. Let cool; serve at room temperature.
Crumble Topping:
Mix ingredients with a fork until crumbly.
