Pineapple Squares:
Blend flour, baking powder, butter and shortening in a large bowl; set aside. Mix egg yolks, vanilla and sour cream; add to flour mixture. Mix well and shape into a ball; chill for 3 hours to overnight. Combine pineapple with syrup, sugar and cornstarch in a small saucepan over medium heat; cook until thickened. Divide dough into 2 portions, one slightly larger than the other; roll out 1/4-inch thick. Press larger portion into bottom and sides of a lightly greased 15"x10" jelly-roll pan; spread with pineapple mixture. Place remaining dough over top; pierce with a fork. Bake at 350 degrees for 50 minutes; cool. Drizzle with Powdered Sugar Glaze; cut into squares.
Powdered Sugar Glaze:
Whisk together to a drizzling consistency. Add more milk, if needed.
Tip: Make your own flavorful vanilla sugar. Fill a canning jar with 2 cups sugar, push a vanilla bean into the sugar and let stand for one to 2 weeks.
