Grandma's Banana Cupcakes:
Blend butter for 5 minutes, using an electric mixer on medium speed. Slowly add sugar; beat in eggs. Add dry ingredients alternately with milk. Stir in bananas, vanilla and nuts, if using. Fill paper-lined muffin cups 1/2 full. Bake at 350 degrees for 18 to 25 minutes, until a toothpick inserted in the center comes out clean. Allow to cool; frost with Cream Cheese Frosting. Keep refrigerated after frosting.
Cream Cheese Frosting:
Blend all ingredients together until spreadable, using an electric mixer on medium speed.
Tip: If an old recipe calls for a cup of sour milk, just stir a teaspoon of white vinegar into a cup of fresh milk and let it stand for a few minutes.
