Add butter to a skillet over medium heat. Add ham and onion; cook until onion is soft. Set aside. In a large bowl, whisk together eggs and milk; add salt and pepper. Stir in ham mixture and 2 cups cheese; fold in potato puffs. Transfer to a buttered 9"x9" baking pan. Top with remaining cheese. Bake, uncovered, at 350 degrees for one hour, or until bubbly and golden.
Tip: A diner-style dinner is fun for the whole family! Make placemats from vintage maps, roll up flatware in paper napkins and serve catsup & mustard from plastic squeeze bottles.
