Swedish Meatloaf

Ingredients

1 1/2 pounds ground beef
1 egg, beaten
1/2 cup herb-flavored dry bread crumbs or stuffing mix
1 (10 3/4-ounce) can cream of mushroom soup, divided
1/2 cup sour cream
1/4 teaspoon nutmeg

Directions:

In a large bowl, mix together beef, egg, bread crumbs or stuffing, and half the soup. Form into a loaf; place in a greased 9"x5" loaf pan. Bake, uncovered, at 400 degrees for one hour. At serving time, combine remaining soup, sour cream and nutmeg in a small saucepan; heat over low heat until bubbly. Turn meatloaf out of pan and slice; spoon sauce over slices.

Tip Cut leftover meatloaf into thick slices, wrap individually and freeze. Later, they can be thawed and warmed quickly for scrumptious meatloaf sandwiches at a moment’s notice.
