In a large pot, cover potatoes with water. Bring to a boil over medium-high heat. Cover and simmer until tender, 30 to 40 minutes. Remove from heat; drain completely. Coarsely mash potatoes while still hot, leaving some lumps for texture. In a small bowl, whisk together cream cheese, sour cream and seasonings until smooth. Stir cream cheese mixture and onions into potatoes. Add a little milk if needed to moisten. Season with additional salt and pepper, if desired.
