Reassemble the sliced tomatoes, sprinkling parsley between the slices as they’re stacked. Place in a glass dish; set aside. Combine remaining ingredients except lettuce in a bowl; drizzle over tomatoes. Cover and refrigerate at least one hour. Before serving, let stand at room temperature 20 minutes. Serve on lettuce leaves, either as whole tomatoes or as slices.
Tip: Declare a Picnic Night at home! Just toss a checkered tablecloth on the dinner table and set out paper plates and disposable plastic utensils. Relax and enjoy dinner with no dishes to wash!
