Hash in a Dash

Ingredients

3 tablespoons oil
1 (32-ounce) package frozen diced potatoes, thawed
3 cups cooked ham, cubed
1 teaspoon salt
1/2 teaspoon pepper
2 cups broccoli, cut into bite-size flowerets
Garnish: paprika

Directions:

In a large non-stick skillet, heat oil over medium-high heat. Combine potatoes, ham, salt and pepper in a bowl; add mixture to skillet. Cover and cook for 2 minutes; sprinkle with broccoli. Cover and cook 6 to 8 minutes longer, until potatoes are tender and lightly golden, stirring occasionally. Garnish with a sprinkle of paprika.

Tip: Fill the base of a large hurricane lamp with pretty beach pebbles or colored glass gems, then top with a fat pillar candle for a delightful centerpiece.
