Zucchini Yum

Ingredients

1/4 cup butter or olive oil
1 onion, diced
1 zucchini, thinly sliced
1 tomato, diced
Optional: 1 teaspoon garlic, minced
1 cup grated Parmesan cheese
salt and pepper to taste

Directions:

Heat butter or olive oil in a skillet over medium heat. Add onion, zucchini, tomato and garlic, if using. Reduce heat to medium-low; cover and sauté until zucchini is translucent. Sprinkle with Parmesan cheese, salt and pepper; let stand until cheese melts.
