Swiss Chard Soup

Ingredients

2 cups beef, chicken or vegetable broth
2 cups water
1 potato, peeled and thinly sliced
1 onion, thinly sliced
1 clove garlic, chopped
4 cups Swiss chard, shredded and stalks chopped
1/3 cup country ham, chopped
salt and pepper to taste
Garnish: grated Parmesan cheese

Directions:

Bring broth and water to a boil in a soup pot over medium-high heat. Add potato, onion and garlic. Cook, partly covered, about 15 minutes. Stir in Swiss chard; cook another 10 minutes. Stir in ham, salt and pepper; heat through. Garnish individual servings with Parmesan cheese.
