4 slices (1/2 inch thick) coarse-textured bread (about 4x3 inches)
1 garlic clove, peeled, cut in half
8 teaspoons extra-virgin olive oil
1/4 teaspoon salt
1/8 teaspoon coarsely ground black pepper
1 small tomato, cut in 8 thin slices
1 tablespoon chopped fresh basil
1. Grill, broil or toast bread slices on both sides until light golden brown. While hot, rub cut side of garlic over 1 side of each bread slice.
2. Drizzle 1 teaspoon oil over garlic-rubbed side of each bread slice; sprinkle with salt and pepper. Top each with tomato slices; sprinkle with basil. Drizzle remaining oil over tomato slices. Serve immediately.
