Pare and dice potatoes into 1/2-inch cubes. Gently boil potatoes 10 minutes in 1 cup boiling water; drain. Add salt. Chop onion. Make white sauce by melting butter in saucepan over low heat. Add flour and milk, stirring constantly, until sauce thickens and begins to boil. Place potatoes, parsley, and onion in greased casserole. Pour sauce over all. Sprinkle bread crumbs on top. Bake 35–40 minutes in 350° oven.
