Cook onions in 3 tablespoons butter till tender. Blend in flour and dash of pepper. Add bouillon and sherry; cook and stir till thick and bubbly. Turn into 1-quart casserole; cover. Toss croutons with remaining 2 tablespoons melted butter; chill croutons until needed.
Bake casserole, covered, in 350° oven for 30 minutes. Sprinkle with buttered croutons, then cheese. Bake, uncovered, 5–10 minutes more.
