Smothered Cabbage

Ingredients

1 medium cabbage
1/2 cup finely chopped green bell pepper
1/4 cup finely chopped onion
1/4 cup butter, melted
1/4 cup all-purpose flour
2 cups milk
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup mayonnaise
3/4 cup shredded medium Cheddar cheese
3 tablespoons chili sauce

Directions:

Cut cabbage into wedges, removing core. Cover, and cook for 10 minutes in a small amount of slightly salted boiling water; drain well. Place wedges in a 9x13x2-inch dish; set aside. Sauté green pepper and onion in butter until vegetables are tender. Add flour, and cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly. Then, stir in salt and pepper, and pour mixture over cabbage. Bake at 375° for 20 minutes.

While cabbage is baking, combine mayonnaise, cheese, and chili sauce; mix well. When casserole comes out of the oven, spoon cheese mixture over cabbage wedges, and bake for 5 minutes or more.
