Farmhouse Potatoes ‘n’ Ham

Ingredients

5 - 6 large russet potatoes (about 2 1/2 pounds), peeled and thinly sliced
1/4 cup butter or margarine
3 tablespoons flour
1 1/3 cups milk
2 teaspoons mustard
1/3 cup minced sweet red onion
1 1/3 cups shredded Cheddar cheese, divided
1 1/2 cups diced cooked ham
1/4 teaspoon salt
1/8 teaspoon pepper
1/3 cup seasoned dry bread crumbs

Directions:

Preheat oven to 350°. Arrange sliced potatoes in 2- to 2 1/2-quart oblong oven-safe casserole and set aside. Put butter in 4-cup glass measure or microwave-safe bowl. Microwave on HIGH about 45 seconds to melt. Blend in flour, milk, and mustard. Microwave on HIGH 3 minutes. Stir and add onion. Microwave on HIGH until sauce thickens. Add one cup cheese and stir until melted. Fold in ham, salt, and pepper. Pour sauce over potatoes. Sprinkle with remaining 1/3 cup cheese and top with bread crumbs. Bake 50–60 minutes, until potatoes are tender.


Fun Fact: The city of Petra, Jorda, takes its name, which is the Greek word for “rock,” from the fact that it is most notable for its buildings and tombs that are carved directly into the red sandstone that serves as the city’s natural protection from invaders. At its peak, the city of Petra was home to some 20,000 Nabataeans who, in the midst of the desert, built an ingenious system of waterways. Established sometime around the 6th century BC, the site remained unknown to the Western world until 1812, when it was introduced by Swiss explorer Johann Ludwig Burckhardt.

Its popularity with tourists may also have a connection to the city’s Biblical significance. It is here where King Aretas called for the arrest of the Apostle Paul at the time of his conversion, which led him to stop persecuting early Christians and become a follower of Jesus Christ himself.
