Preheat oven to 350°. Combine brown sugar, cashews, salt, and ginger. In a 10x6x2-inch baking dish, layer half the sweet potatoes, half the peaches, and half the brown sugar mixture. Repeat layers. Dot with butter or margarine. Bake, covered, in preheated oven 30 minutes. Uncover and bake mixture about 10 minutes longer.
Editor's Extra: Use a 15-ounce can peaches for more peachy flavor. And try chopped pecans or peanuts for a change as well.
