Susan Porubcan's apple cake is certainly as American as apple pie. In it she uses bourbon, the liquor with the distinction of being the only true American spirit. It's distilled from cornthat most American of grainsand can, by law, have only limestone-filtered spring water added to lower its proof. Bourbon was first made in 1789 (in what was originally Virginia but later became Kentucky) by a Baptist minister, Elijah Craig, who would doubtless have approved this creative use of the potent beverage.
