1. Place lamb rib, loin or shoulder chops on broiler pan. Place or adjust broiler pan so tops of 1-inch-thick chops are 4 inches from heat and 2-inch-thick chops are 6 inches from heat.
2. Broil 1-inch-thick chops 10 to 12 minutes 2-inch-thick chops 20 to 22 minutes, turning once during cooking. Sprinkle with salt and pepper* unless using glaze or marinade containing salt or soy sauce.
TIP: * Other seasonings for lamb chops include a dash of garlic salt, paprika or curry powder added with salt and pepper.
