Serves: 8
1. Heat oven to 325°F. Place roast in roasting pan, rib bones up. Sprinkle with salt and pepper. Wrap tips of bones in foil to prevent excess browning. Insert meat thermometer so bulb reaches center of thickest part of meat, but does not rest in fat or on bone. Do not add water or cover.
2. Bake on lowest oven rack at 325°F. for 3 to 3 1/2 hours or until meat thermometer registers 160°F. To serve, remove foil and cover bone ends with paper frills or spiced crab apples. Serve with stuffing, if desired.
