A simple glaze brushed onto the meat promotes browning and adds flavor. Some easy choices:
Zesty Garlic Glaze
Combine 1 tablespoon paprika, 1/2 teaspoon dried basil leaves, 3 minced garlic cloves, 1/3 cup water, 1/3 cup dry sherry, 2 tablespoons oil and 2 tablespoons soy sauce. Brush lamb with glaze every 30 minutes during roasting.
Jelly Glaze
Melt 3/4 cup mint or apricot preserves over low heat. Brush glaze on lamb during last hour of roasting.
Herbed Jelly Glaze
Melt 3/4 cup currant jelly and stir in 1 tablespoon melted butter, 1 tablespoon cider vinegar and 1 tablespoon chopped fresh tarragon or 1 teaspoon dried tarragon leaves. Brush glaze on lamb during last hour of roasting.
Plum-Good Glaze
In blender container, combine a drained 16-oz. can (2 cups) pitted purple plums plus 1/4 cup liquid from the can, 2 tablespoons lemon juice, 1 tablespoon soy sauce, 1 teaspoon dried basil leaves and 1 teaspoon Worcestershire sauce. Blend at medium speed until smooth. Brush lamb with glaze every 30 minutes during roasting.
Sweet-n-Spicy Glaze
Combine 1/4 cup firmly packed brown sugar, 11/2 teaspoons salt, 1/2 teaspoon dry mustard, 1/2 teaspoon chili powder, 1/4 teaspoon ginger, 1/4 teaspoon cloves, 1 minced garlic clove and 1 tablespoon lemon juice. Brush glaze on lamb during the last hour of roasting.
