1. Spray broiler pan with nonstick cooking spray. Sprinkle pork chops with 1/4 teaspoon salt and dash pepper place on sprayed pan. Broil 4 to 6 inches from heat for 8 to 12 minutes or until pork is no longer pink in center, turning once.
2. Meanwhile, in small saucepan or microwave-safe bowl, combine jelly, vinegar, tomato paste, 1/4 teaspoon salt and thyme mix well. Heat over medium heat or microwave on high for 30 to 40 seconds until jelly melts, stirring occasionally.
3. In small bowl, combine tomato, zucchini and parsley. Pour hot jelly mixture over tomato mixture mix well. Serve relish with pork chops.
