Look for lamb that is pink to light red in color a darker red color probably indicates older meat. Any fat should look firm and white. The parchmentlike covering on a leg of lamb (called the "fell") is usually left on to help retain juices during roasting the leg whole, but can be trimmed from steaks or chops before cooking.
