Grandma's Sicilian Pizza:
Prepare Pizza Dough; let rise while preparing the sauce. In a saucepan over medium heat, combine undrained tomatoes, garlic and herbs. Bring to a boil; cook about 15 minutes, breaking up tomatoes with a spoon. Place Pizza Dough in the center of a greased 15"x10" jelly-roll pan; spread dough out to edges of pan. Spread sauce over dough; add cheese and desired toppings. Bake at 425 degrees for 30 to 40 minutes, until edges are lightly golden.
Pizza Dough:
Heat water until very warm, about 110 to 115 degrees; pour into a large bowl. Add yeast; stir until dissolved. Add flour, olive oil and salt; mix well and let rise about 15 minutes.
Tip: For a crisp pizzeria-style finish, dust the pizza pan with cornmeal before adding the crust.
