Cook pasta according to package directions; drain. Meanwhile, in a skillet over medium heat, cook sausage until no longer pink; remove to paper towels to drain. In the same skillet, melt one tablespoon butter; add garlic and sauté for one minute. Stir in remaining butter, spinach, undrained tomatoes, mushrooms and seasonings. Add sausage and reduce heat to medium-low; simmer while pasta finishes cooking. Add sauce to cooked pasta; toss to mix well. Garnish with Parmesan cheese.
Tip: Wide-rimmed soup plates are perfect for serving saucy pasta dishes as well as hearty dinner portions of soup.
