Ingredients

1 (14 1/2-ounce) can Italian-style diced tomatoes
2/3 cup instant rice, uncooked
1/4 teaspoon Italian seasoning
1 (15 1/2-ounce) can cannellini beans, drained and rinsed

Directions:

Combine undrained tomatoes and remaining ingredients in a saucepan over medium-high heat. Cover; cook 3 to 4 minutes. Uncover; cook an additional 2 to 3 minutes, or until slightly saucy and rice is tender.

Tip: Over dinner, ask your children to tell you about books they’re reading at school and return the favor by sharing books you loved as a child. You may find you have some favorites in common!
