Heat oil in a large pot over medium heat; sauté garlic, onion and celery until tender. Stir in remaining ingredients except beans, macaroni and garnish. Bring to a boil; reduce heat to low. Cover and simmer for one hour, stirring occasionally. Stir in undrained beans and uncooked macaroni. Simmer, uncovered, for another 30 minutes, stirring occasionally, until macaroni is tender. Serve sprinkled with Parmesan cheese.
Tip: Stock your freezer with comforting home-cooked soups and sauces, ready to enjoy anytime! They freeze well for up to three months in plastic freezer containers. To serve, thaw overnight in the refrigerator. Thin with a little water when reheating, if needed.
