Italian Tomato Salad

Ingredients

2 tomatoes, cut into bite-size pieces
1 tablespoon fresh basil, chopped, or 1 teaspoon dried basil
1 tablespoon olive oil
1 tablespoon red wine vinegar
1 cup fat-free Italian salad dressing

Directions:

In a salad bowl, mix all ingredients together. Cover and chill for at least 30 minutes. Toss again just before serving.

Tip: Polenta is a terrific side dish for saucy Italian dishes. Topped with marinara sauce and sautéed mushrooms, it can even serve as a meatless main dish. You can find ready-to-use polenta in the supermarket’s refrigerated section...easy to slice, heat and serve.
