1 Prepare the cardoons as in Fried Cardoons (see above) through step 2.
2 Place a rack in the center of the oven. Preheat the oven to 450°F. Generously butter a 13 × 9 × 2-inch baking pan.
3 Arrange the cardoon pieces in the pan. Dot with the butter and sprinkle with salt and pepper. Scatter the cheese over the top.
4 Bake 10 to 15 minutes, or until the cheese is slightly melted. Serve hot.
