1 In a medium saucepan, melt the butter over medium heat. Add the onion and cook until tender and golden, about 10 minutes.
2 Add the peas, lettuce, mint leaves, and salt and pepper to taste. Stir in 2 tablespoons water and cover the pan. Cook 5 to 10 minutes or until the peas are tender. Serve hot.
