1 Wipe the mushrooms clean with damp paper towels. Snap off the stems of the mushrooms and trim the ends where soil collects. Cut the mushrooms into thick slices.
2 In a large skillet, melt the butter over medium heat. Add the shallot and cook until softened, about 3 minutes. Add the mushrooms and salt and pepper to taste. Cook, stirring often, until the mushrooms are lightly browned, about 10 minutes.
3 Stir in the cream and bring to a simmer. Cook until the cream is thickened, about 2 minutes. Serve hot or warm.
