1 Place a rack in the center of the oven. Preheat the oven to 450°F. Combine the cut-up vegetables and garlic cloves in a large roasting pan. The vegetables should be only one layer deep. Use two pans, if necessary, so that the vegetables are not crowded. Toss the vegetables with the oil and salt and pepper to taste.
2 Roast the vegetables about 1 hour 10 minutes, turning them every 15 minutes or so until they are tender and browned.
3 Transfer the vegetables to a serving dish. Serve hot.
