1 Wipe the mushrooms clean with damp paper towels. Snap off the stems of the mushrooms and trim the ends where soil collects. Cut the mushrooms into halves or quarters, if large. In a large skillet, melt the butter with the oil over medium heat. Add the onion and cook until softened, 5 minutes.
2 Stir in the mushrooms, salt and pepper to taste, and the Marsala. Cook, stirring frequently, until most of the liquid evaporates and the mushrooms are lightly browned, about 10 minutes. Stir in the parsley and remove from the heat. Serve hot.
