1 Place a rack in the center of the oven. Preheat the oven to 375°F. Line a baking pan with foil.
2 Wash the onions, but do not peel them. Place the onions in the prepared pan. Bake the onions 1 hour to 1 1/2 hours, until tender when pierced with a knife.
3 Trim off the root ends of the onions and peel off the skin. Cut the onions into quarters and place them in a bowl. Add the oil, vinegar, and salt and pepper to taste, and toss to combine. Serve hot or at room temperature.
