1 Cut the cauliflower into 2-inch florets. Trim off the ends of the stems. Cut thick stems crosswise into 1/4-inch slices.
2 Place a rack in the center of the oven. Preheat the oven to 400°F. Pour the oil into a 13 × 9 × 2-inch roasting pan. Add the vegetables and toss well. Sprinkle with the oregano and salt and pepper to taste. Toss again.
3 Bake 45 minutes or until the vegetables are tender and browned. Serve hot.
