1 In a medium skillet, cook the onion and pancetta in the olive oil over medium heat for 10 minutes or until golden.
2 Stir in the fava beans and salt and pepper to taste. Add the water and lower the heat. Cover the pan and cook 5 minutes or until the beans are almost tender.
3 Uncover the pan and cook until the beans and pancetta are lightly browned, about 5 minutes. Serve hot.
