1 Scrub the zucchini with a brush under cold running water. Trim off the ends. Cut into 1/8-inch slices.
2 In a medium skillet over medium-low heat, melt the butter. Add the onion and cook until softened, about 5 minutes.
3 Add the zucchini and toss to coat with the butter. Cover and cook 5 minutes, or until the zucchini is just tender when pierced with a fork.
4 Add the salt and pepper to taste and parsley and toss well. Serve immediately.
