Three Cheese Puff Breakfast Souffle

Ingredients

6 eggs
1/2 cup all purpose flour
1 teaspoon baking powder
1 cup milk
8 ounces cottage cheese
3 ounces cream cheese, cut into small cubes
6 tablespoons butter, cut into 1/4 inch cubes
1 pound Monterey Jack-Colby cheese

Directions:

In a large bowl, beat the eggs. Blend in flour and baking powder. Stir in milk. Beat until smooth. Stir in remaining ingredients. Pour into greased 2 quart shallow baking dish. Bake at 350 degrees for 45 minutes or until set. Delicious for brunch.
