Season chicken with salt and pepper.
In stock pot or a Dutch oven on medium heat, brown chicken in cooking oil until golden brown.
Remove chicken. Add rice and slowly add the amount of (hot) water and butter as directed on the package of the rice mix.
Add the contents of the seasoning packets. Mix well then add the broccoli and cheese. Stir slightly to mix. Place chicken on top.
Cover and cook 20 to 30 minutes until rice is done. Check often as you may need to add more water.
